Snacks & Quick Bites

  • Frozen fruit pops (blend fruit with water or coconut milk, pour into molds, freeze)
  • Nice cream (blend frozen bananas, add berries if desired)
  • Hummus with veggie sticks (blend cooked chickpeas, garlic, lemon juice, olive oil; serve with bell peppers, cucumbers, or carrots)
  • Date & nut energy bites (blend dates with oats and nuts, roll into balls)

Lunch & Filling Salads

Balanced salads with protein, complex carbs, healthy fats, and vegetables:

  • Mediterranean Chickpea Salad (chickpeas, cucumbers, tomatoes, bell peppers, red onion, olives, parsley, olive oil, lemon juice instead of vinegar)
  • Quinoa & Black Bean Salad (cooked quinoa, black beans, corn, red peppers, avocado, cilantro, lime juice, olive oil)
  • Kale & Lentil Salad (cooked lentils, chopped kale, shredded carrots, sunflower seeds, olive oil, lemon juice)

  • Jamaican Saltfish-FreeBoiled Banana dish (onions, tomatoes, and thyme + black pepper + salt sautéed; add quinoa for protein if desired.. bananas boiled till soft in water separately)
  • Curry chickpeas and sweet potato (chickpeas + sweet potato + vegetables in coconut milk)
  • Thai coconut curry (mix vegetables like bell peppers, carrots, spinach, and mushrooms in coconut milk with Thai spices; add tofu, or quinoa for protein if desired)

  • Oat & banana cookies (mashed bananas + oats + nuts, bake)
  • Baked oatmeal squares with raisins or dates
  • Sweet potato bars (mashed sweet potato + oats + dates, bake)
  • Apple cinnamon crisp (slice apples, top with oats and nuts, bake)
  • Nice cream (blend frozen bananas, optional berries)
  • Chia seed pudding with fruit (soak chia seeds in water or plant milk, top with fruit)
  • Date & nut energy bites (blend dates + oats + nuts, roll into balls)
  • Oat & date bars (pulse dates, oats, and nuts, press into pan)
  • Coconut & almond clusters (mix shredded coconut + chopped almonds, roll into clusters)
